Paleo dinner, Stuffed chicken thighs.
Paleo challenge continues: stuffed chicken thighs & legs, spinach & avocado salad, sweet potato. 1 pack of chicken legs & thighs (cheaper than breasts) slice open, de-bone. Blend; almonds, lemon zest, garlic, onion, parsley, sea salt, 5-10 seconds (blended but not mush). Stuff the mix into the chicken, fold over & secure with cocktail stick, drizzle with rapeseed oil. Roast on 180 for 35/40 minutes or until the skin is crispy!
